This is a grape crusher destemmer altered to process apples.
There is a blade that slices all of them to nice thin pieces.
The these paddles on the inside help move the apple slices
forward away from the blade.
Below the paddles, there are 2 rollers that shred the slices.
This is the perfect texture for pressing.
If it is too fine (apple sauce) it clogs the pores of the press.
If it is too big, not enough juice is extracted.
This is the apple mash that is collected under the crusher.
It is then treated with enzymes and pumped to the press
“Free-run” juice dripping out of the press.
When it is full the mash is gently pressed for about an hour.
A bladder press is very efficient at extracting juice gently.
This produces higher quality juice because the bitter, harsh
flavours are not pressed out of the skins and seeds.
